For many generations, the growers of the Croizet family have dedicated themselves to nurturing this blessing of nature to the greatest possible extent in order to achieve true excellence. First we grow our grapes with ancient techniques, using natural fertilizers and regular prunings in order to maintain enough acidity to produce an elegant cognac. Next comes the process of distillation, in which the spirits must be separated part by part, with consummate art. The “coupe” - the instant when the fraction of distillate is drawn off the liquid - is the moment when technique and inspiration come in, the moment that alone determines the potential of the finished cognac.
